Salam 6th of Ramadhan!
My friend Peggen, all the way from Australia has been asking me for some recipes and gosh.. I don’t think I have been a very good friend! Haha! So finally here you go girlfriend! This is my easy peasy RESEPI SUP EKOR (Oxtail Soup Recipe). You also make SUP TULANG using the same ingredients and methods.
I took me hours for the oxtail to be tender and I should have used a pressure cooker instead. Cooking time can be reduced to half. This dish is best eaten with white rice or bread. Do try it! 🙂 🙂
Bahan bahan:
600 gram ekor lembu
500 gram daging lembu
2 sudu besar minyak masak
1 sudu besar Ghee
2 batang cinnamon
3 kuntum bunga lawang
5 kuntum bunga cengkih
3 biji buah pelaga
1 sudu besar rempah sup
2 cawan beef stock / 2 cubes
1 carrot dipotong kasar
2 batang celery dipotong kasar
Garam secukup rasa
Gula secukup rasa
Sedikit air asam jawa/ jus limau nipis
Daun sup dan daun bawang dihiris
Bawang goreng for garnishing
If you do not have all these loose spices, you can just go for Sup Bunjut but it doesn’t taste as nice.
Bahan Kisar:
5 ulas bawang merah
3 ulas bawang putih
1 inci halia
Mashed/blended carrot and celery (optional)
Cara-cara memasak:
Tumis bahan-bahan kisar dalam minyak dan Ghee. Kemudian masukkan cinnamon,bunga lawing, bunga cengkih .buah pelaga dan goreng sehingga berbau harum. Masukkan sesudu besar rempah sup dan boleh tambah air kalau terlalu pekat. Goreng sehingga garing.
Kemudian masukkan stok daging. Kalau menggunakan kiub, masukkan 3 gelas air. Kemudian masukkan ekor dan daging. I like to put my carrots and celery together with the meat so that they will become very very soft and break into pieces in the soup. Kalau suka sayur tersebut chunky, boleh masukkannya kemudian apabila ekor dan daging hampir lembut. Kalau suka ada teksture di dalam kuah sup dan juga chunky vegetables, boleh masukkan carrot dan celery lenyek/blended dan apabila soup hampir siap, masukkan potongan sayur.
Jangan lupa garam, gula dan sedikit air asam jawa/ jus limau nipis. Tabur daun sup, spring onion dan bawang goreng lalu hidangkan! Sangat syiok!!!

Thanks for the recipe! Very easy, but hv to be patient. Tried this yesterday, and it took 5 hrs for the ekor to lembut. But it was yummy & worth the wait ????
