The first time I had roast salmon with crispy skin was when my boss took us for lunch at one of the nice restaurants in Tropicana Shopping Mall in PJ. (Thanks boss!). Salmons that I usually have is very juicy and sometimes soaked with gravy. But the one that I had was succulent in the meat but very crispy on the skin. Very nice!
Another salmon recipe that I like is teriyaki. One of the best place to have this is at Kampachi. I went to the one in Equatorial Bangi. So when I fetched a kilo of salmon at a very good price the other I just had to try the combination of teriyaki salmon with crispy skin.
And the result is….
TAK JADI!

Anyway, the teriyaki part was a success although it was my first night time. I just failed at getting the skin to be crispy yummy yum. I definitely more try and error, perhaps I need to use a kitchen tong and hold the skin side down into a hot cooking oil in a wok before throwing the whole cut into the oven?
But that would defeat my endeavor of cooking with no frying, kan? Sigh… Where art thou, Master Chef Wan?
Anyway, the fish was served with parsley roast potatoes and poached spinach. Azman loved the potatoes, he has never been a fan of spinach and he said the salmon tastes good, very much like salmon!
Abih takkan aku masak salmon keluar rasa ayam belanda kan????? ni mesti kes laki aku takde kepercayaan kat aku ni… sebelum suap ke mulut lagi dia dah budget confirm tak sedap hilang rasa salmon. ampehh tul….
Teriyaki Salmon with Parsley Roast Potatoes and Poached Spinach
As for myself, I would say i had mixed tad too much ginger in the teriyaki marinate. Mental note, next time less ginger.Here is the recipe:
a. soy sauce
b. ginger, pounded
c. olive oil
d. pepper corn, grounded
e. sake ( i didn’t use this but it seem like a must for teriyaki, alternatively you can use white wine)
f. salt (i didn’t use this for the soy sauce that I used has already have salt, takkan dah ada kicap lagi nak taruk garam?alamat nak mampos cepat)
I rubbed the mixture of above ingredients on the salmon cuts and let them marinate for about 15 min before cooking them in my Chefel pan. I love this pan. It makes cooking much faster. If only it can clean itself after cooking… I would recommend it to you.
So there you go. I guess my cooking enthusiasm still lack methods. Please share with me recipes and tips ok? Gtg now, I need more practice! I wonder what Domino’s is having for this week’s special?! eh tadi bukan kata nak practice?

**sedang pakai topi chef** nak kulit garing kene grill direct on xtreme heat. kalau marinate ikan tu, jgn le tgh lembab tu terus grill…bagi kering sket. tambah kalau bake in the oven, kena bagi jgn terlalu lembab dan NO NO aluminium foil sbb dia akan bagi everything is moist.
kalau malas sangat nak tunggu kering, bakar macam biasa dalam oven separuh, lagi sparuh kuar dan grill je
